The Pappardelle al Ragù Toscano is one of Tuscany's most famous pasta dishes. The wide egg noodles absorb the aromatic ragù particularly well, ensuring an intense flavor experience.

Traditionally, the ragù is simmered slowly, allowing the flavors of meat, tomatoes, vegetables, and herbs to combine optimally. High-quality ingredients play a crucial role in this.

Ingredients for 4 persons

  • 500g Pappardelle all'Uovo
  • 400g ground beef
  • 150g pancetta or diced bacon
  • 1 onion
  • 1 carrot
  • 1 stalk of celery
  • 500ml Passata di Pomodoro
  • 3 tbsp extra virgin olive oil
  • 150ml red wine
  • Salt
  • freshly ground black pepper
  • fresh rosemary or thyme
  • optional: Parmesan for serving

Step 1 – Prepare the Ragù

Finely dice the onion, carrot, and celery. Heat the olive oil in a large pot.

First, fry the pancetta, then add the vegetables and sauté until translucent for a few minutes. Afterward, add the ground beef and sear it thoroughly until it develops a nice brown color.

Step 2 – Simmer Ragù with Tomatoes and Red Wine

Deglaze the meat with red wine and let the wine reduce briefly.

Then add the Passata di Pomodoro. Season with salt from Frantoi Cutrera, pepper, and herbs.

Now let the ragù simmer gently over low heat for at least 60 to 90 minutes. The longer the ragù simmers, the more intense the flavor.

Step 3 – Cook Pappardelle

Bring plenty of water to a boil in a large pot and salt it with sea salt from Sicily.

Cook the pappardelle al dente. Then add the pasta directly to the ragù and mix carefully so that the sauce completely coats the wide noodles.

Step 4 – Serve like in Italy

Arrange the Pappardelle al Ragù Toscano on preheated plates. If desired, garnish with freshly grated Parmesan and a small drizzle of high-quality extra virgin olive oil.

The result is an authentic Italian pasta dish with intense aromas and a traditional character.
