Le Brin d’Olivier's Olives Noires de Nyons AOP (Protected Designation of Origin) come from the Baronnies region around Nyons and are exclusively made from the traditional Tanche olive. The AOP certification guarantees their origin, varietal purity, and traditional processing.

The olives are harvested by hand between December and January at optimal ripeness. They are then marinated with the pit in brine and dry-cured, a classic process that preserves their spicy, slightly sweet, and intensely Mediterranean flavor. Their soft texture and deep aroma make them a true specialty of Provence.
