Frantoio Sant’Agata d’Oneglia's Trofiette Liguri are a traditional pasta specialty from Liguria. The characteristic, hand-rolled noodles with tapered ends owe their name to the Genoese term strofissià, which describes the rubbing hand movement used during shaping.

Made exclusively from durum wheat semolina and water, Trofiette represent an original, unadulterated pasta culture. Their special shape absorbs sauces excellently, making them the ideal accompaniment to classic Ligurian dishes. Historically, Trofiette date back to the late 18th century and remain an integral part of the regional cuisine around Genoa to this day.
