Each bottle has been personally signed by Ermes Malpighi and stands for the highest artisanal perfection and decades of experience.

Its production adheres exclusively to the traditional specifications of the Consorzio dell’Aceto Balsamico Tradizionale di Modena PDO. Only cooked grape must from hand-picked grapes from the vineyards around Modena is used. After gentle cooking, an exceptionally long aging process of at least 35 years begins in a classic battery of different wooden barrels, including oak, chestnut, and cherry. Each wood contributes its own characteristics to the aromatic depth and complexity.

During this long aging period, the balsamic naturally concentrates, developing an intense, deep dark color and a syrupy texture. In terms of taste, it displays an impressive balance of natural sweetness and fine acidity, accompanied by aromas of ripe fruit, wood, spices, and balsamic depth.
