The Aceto Balsamico Tradizionale di Modena DOP Extra Vecchio from the renowned house of Acetaia Malpighi is one of the great classics of Italian vinegar artistry. This strictly protected specialty originates from Modena and embodies the essence of centuries-old craftsmanship and patience.

Only hand-picked grapes from the vineyards around Modena are used for its production. The obtained grape must is slowly and gently cooked down and then poured into a traditional battery of different wooden barrels. The balsamic vinegar matures for at least 25 years in barrels made of oak, chestnut, and cherry, with each wood contributing its own aromatic nuances.

During this long aging period, the Extra Vecchio develops its characteristic deep dark color, a natural syrupy consistency, and exceptional aromatic depth. On the palate, it displays a perfectly balanced interplay of natural sweetness and fine acidity, accompanied by notes of ripe fruits, wood, spices, and balsamic elegance. The long aging ensures enormous complexity and an impressively long finish.
